Otoro is the fattiest portion of the tuna, found on the very underside of the fish. Because it is the fattiest part of the fish, it practically melts in your mouth. It also lends sashimi a sweeter taste. 

This Species of blue fin is know for its oiliness and taste. This species of bluefin grow up to 600lbs before harvested.

Before you start:

Step 1, keep  Otoro in vacuum packed completely and immersed in ice water for 2 hours.

Step 2, take then Otoro out of the plastic bag, gently remove moisture and shaving with kitchen towel.
